The particles that formed the solar system condensed rather than dispersed due to the interplay of gravity and other forces within the solar nebula. Gravity pulled the particles together, while the conservation of angular momentum caused the nebula to flatten into a disk and spin faster as it collapsed, concentrating matter in certain regions. This led to collisions and accretion, where particles stuck together and grew into larger objects, eventually forming planets.
